Almond Muffins Recipe for Ulcerative Colitis
Preparing Time = About 15 minutes
Cooking Time = About 30 minutes
Recipe makes 12 small muffins.
Ingredients:
Blanched almond flour = 1 cup
Eggs (white only) = 4
Bananas = 3
Ghee, melted = 3 Tbsp.
Salt = ½ tsp
Baking soda = ½ tsp
Cardamom powder = ½ tsp
Mix all the ingredients in a blender. Pour batter into paper baking cups placed in a muffin tray.
Bake at 325 0F for 30 minutes. Check if fully cooked. You may need to cook a few minutes more or less, depending on your oven.
As diarrhea improves, you can add one peeled apple to the recipe.
With further improvement in your diarrhea, you can increase the amount of apple to 2 peeled.
If you develop constipation, stop bananas and use unpeeled apples and regular almond flour.
Almond bread for Ulcerative Colitis
You can also use a baking dish and make almond bread instead of muffins, using the same recipe.
Herbal Tea for Ulcerative Colitis
Cooking Time = About 15 minutes
Makes one cup of tea.
Ingredients:
Fresh mint leaves = 4 (use usual garden mint, also called spearmint, but not peppermint.) Alternatively, you can use 1 tsp. of dried mint leaves.
Fennel seeds = 1 tsp
Coriander seeds = 1 tsp
Cumin seeds = 1 tsp
Cardamom seeds = 2-3 seeds
Honey = 1 tsp
Salt = 1/4 tsp
Add 1-1/2 cups of water in a pot. Bring it to a boil. Add mint leaves and seeds of fennel, coriander, cumin, and cardamom. Let it simmer for 10-15 minutes.
Pour into a cup using a sieve to prevent seeds falling into the cup. Let it cool off a bit.
Add honey and salt, and enjoy your delicious cup of herbal tea.
This tea is great to improve your digestion and for sooth your stomach.
