Almond Muffins
Ingredients:
Almonds, raw =
1½ cups
Apples = 2
Eggs
= 3
Honey
= 1 tablespoon
Milk or Yogurt
= ¼ cup
Butter = 2
tablespoons
Baking Soda =
½ teaspoon
Technique:
Start oven at bake 340 degrees Fahrenheit.
Break 3 Eggs into a blender. Chop Apples into small
chunks and add to the blender. Turn the blender first at Chop then at
Mix . Eggs and apples will blend into a gravy.
Add ¼ milk or Yogurt to the blender. Add 1 tablespoon
of Honey.
Add to the blender Almonds ½ cups at a time, chop and
mix, and then add another ½ cup, chop and mix, until a total of 1½ cups
have been added or the the mix has reached a batter consistency.
Add ½ teaspoon of Baking Soda to the batter and mix.
Add 2 tablespoons of melted Butter to the batter and
mix.
Now batter is ready. If it is too thick, you can add
another tablespoon of Yogurt or milk; if it is too thin; add a little
more Almonds.
This amount of batter makes about 9 muffins. Line
muffin holders with paper/tin muffin cups. Pour batter into the muffin
holders.
By now, oven should be ready. Put the muffins in the
oven and bake for 30 minutes. Then turn the oven off but leave muffins
in for another 5 minutes.
Take muffins out. Don’t forget to use gloves.
Leave muffins at room temperature to cool off. Then
you can place them in a plate, cover them up with a paper (Press N’ Seal
works well) and place in a refrigerator. Muffins will stay good for
about three to four days.
Warm the muffin up in a microwave for ½ to1 minute
and enjoy your delicious muffin in place of bread.
You can also make bread in stead of muffins. Pour
batter into a bread dish, after you have lined it with wax paper and
moistened with a little olive oil. Bake at 350 degrees for 45 minutes.
Stick regular knife into the bread and pull it out.
Knife comes out clear when bread is ready.
Each oven varies a little bit. So experiment with
changing the temperature and duration of cooking a little bit to get
muffins / bread to your taste.
You can also add blue berries to the batter. Add blue
berries as the last ingredient to the batter and mix them with a spoon.
